Oven-Baked Swiss Onion Potato Bites

Ingredients
  

  • 4 medium Yukon Gold potatoes scrubbed and sliced into 1/4-inch rounds
  • 1 large sweet onion thinly sliced and chopped
  • 2 cups shredded Swiss cheese or a little more, if desired
  • 3 tbsp butter melted

Instructions
 

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  • Lightly brush the parchment with a little melted butter.
  • Slice the potatoes into 1/4-inch rounds. If soaked ahead, drain and dry them very well.
  • Arrange the potato slices in a single layer on the prepared baking sheet.
  • Brush the tops of the potatoes with the remaining melted butter.
  • Scatter a small spoonful of chopped onion over each potato round.
  • Top each round with a pinch of shredded Swiss cheese, pressing lightly if desired.
  • Bake for 22–28 minutes, or until the potatoes are fork-tender, the onion is softened, and the cheese is melted, bubbly, and lightly golden.
  • Let the potato bites rest for 3–5 minutes before transferring to a serving dish.
  • Serve warm with black pepper, garlic powder, or extra cheese if desired.

Notes

For extra savory flavor, add a pinch of garlic powder or black pepper before baking. Gruyère can be used in place of Swiss for a richer variation.
