Ingredients
  

  • 8 oz elbow macaroni
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1 tsp mustard powder
  • 1/2 tsp salt plus more for pasta water
  • 1/4 tsp black pepper
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Gruyere cheese shredded
  • butter or cooking spray for greasing dish

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Cook macaroni in salted water until al dente. Drain and place in baking dish.
  • Melt butter in a saucepan, whisk in flour, and cook for 1–2 minutes.
  • Gradually whisk in milk until smooth and thickened.
  • Stir in mustard powder, salt, and pepper.
  • Lower heat and add cheeses gradually, stirring until melted and smooth.
  • Pour sauce over pasta and gently mix.
  • Bake for 20–25 minutes until bubbling.
  • Rest 5–10 minutes before serving.

Notes

Add breadcrumbs for crunch or mix in bacon for extra richness.
