Ingredients

  • 4 large ripe bananas sliced into 1/2-inch rounds
  • 1 can sweetened condensed milk 14 oz
  • 2 large eggs beaten
  • 1 tsp pure vanilla extract
  • 1/4 tsp cinnamon plus more for topping if desired
  • butter or nonstick spray for greasing the pan

Instructions

  • Preheat the oven to 350°F.
  • Grease a 9-inch pie plate with butter or nonstick spray.
  • Peel the bananas and slice them into 1/2-inch rounds.
  • Arrange the banana slices in the pie plate, overlapping slightly.
  • In a bowl, whisk together the sweetened condensed milk, beaten eggs, vanilla extract, and cinnamon until smooth.
  • Pour the custard mixture slowly over the bananas.
  • Tap the pie plate gently on the counter to help the custard settle between the banana slices.
  • Place the pie plate on a baking sheet.
  • Bake for 30–35 minutes, until the edges are set, the top is lightly golden, and the center has a slight jiggle.
  • Let the pudding rest for 15–20 minutes before serving.
  • Sprinkle with an extra pinch of cinnamon if desired and serve warm.

Notes

Use very ripe bananas for the best caramelized flavor. Let the pudding rest before serving so the custard thickens properly.
