Ingredients

  • 1 lb ground beef 80–90% lean
  • 2 cans creamed corn 14 to 15 oz each
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus extra if desired
  • 1 tsp kosher salt
  • black pepper to taste

Instructions

  • Preheat the oven to 375°F and grease a 9x13-inch glass baking dish with cooking spray.
  • Crumble the raw ground beef into the baking dish, spreading it loosely and evenly without packing it down.
  • Wash hands thoroughly after handling the raw beef.
  • Sprinkle the kosher salt and black pepper over the beef.
  • In a bowl, stir together the creamed corn and sour cream until fully combined.
  • Pour the corn mixture over the beef and spread it evenly to cover as much of the meat as possible.
  • Sprinkle the shredded cheddar cheese evenly over the top.
  • Cover the dish tightly with foil.
  • Bake covered for 30 minutes.
  • Carefully remove the foil and bake uncovered for another 15–20 minutes, until the cheese is melted, lightly golden, and the edges are bubbling.
  • Check the center to make sure the beef is fully cooked with no pink remaining and reaches 160°F.
  • If needed, bake for another 5–10 minutes until fully cooked.
  • Let the casserole rest for 5–10 minutes before serving.

Notes

Do not pack the beef down; keeping it loose helps it cook evenly. Add extra cheddar on top for a cheesier finish.
