Ingredients
  

  • 2 lb boneless skinless chicken thighs or breasts cut into large pieces
  • 1 1/2 cups heavy cream or half-and-half
  • 1 1/2 tsp sweet paprika plus a pinch extra for the top
  • 1 1/2 cups shredded mild cheese Monterey Jack, Colby, or mild cheddar

Instructions
 

  • Preheat the oven to 375°F and lightly grease a 2 1/2-quart ceramic baking dish.
  • Pat the chicken pieces dry with paper towels.
  • Arrange the chicken in a single layer in the prepared baking dish, keeping the pieces close but not stacked.
  • In a small bowl or measuring cup, whisk the sweet paprika into the heavy cream.
  • Pour the paprika cream over the chicken and gently nudge the pieces so the cream settles underneath and between them.
  • Cover the dish tightly with foil and bake for 25 minutes.
  • Carefully remove the foil and stir the chicken and sauce gently.
  • Sprinkle the shredded mild cheese evenly over the top.
  • Dust with a small pinch of extra paprika.
  • Return the dish to the oven, uncovered, and bake for 15–20 minutes, until the cheese is melted, bubbling, and golden in spots.
  • Optional: Broil for 1–2 minutes for a more golden top, watching carefully.
  • Let the dish rest for 5–10 minutes before serving.

Notes

Patting the chicken dry helps keep the sauce silky instead of watery. Serve over rice, noodles, potatoes, or buttered vegetables.
