Ingredients
  

  • 1 1/2 lb ground beef 80–85% lean
  • 1 packet taco seasoning about 1 oz
  • 1 bag corn chips 9–10 oz, lightly crushed but not pulverized
  • 3 cups shredded sharp cheddar cheese divided
  • 1/4 cup water for simmering with taco seasoning

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13-inch baking dish.
  • Brown the ground beef in a large skillet over medium-high heat, breaking it into crumbles, until no pink remains.
  • Drain off the excess fat carefully.
  • Sprinkle the taco seasoning over the beef and add 1/4 cup water.
  • Stir well and simmer for 2–3 minutes, until the beef is evenly coated and most of the liquid has cooked off.
  • Spread about two-thirds of the corn chips evenly into the bottom of the prepared baking dish.
  • Sprinkle 1 cup of shredded cheddar cheese over the corn chips.
  • Spoon the seasoned beef evenly over the cheese layer, spreading it to the edges.
  • Top with the remaining corn chips.
  • Sprinkle the remaining 2 cups of shredded sharp cheddar cheese evenly over the top.
  • Bake for 15–20 minutes, until the cheese is fully melted, bubbling around the edges, and lightly golden in spots.
  • Let the casserole rest for 5–10 minutes before serving.

Notes

Serve with sour cream, salsa, shredded lettuce, or chopped tomatoes. For extra heat, use spicy taco seasoning or pepper jack cheese.
