Ingredients
  

  • 4 bone-in pork chops about 3/4-inch thick
  • 1 20-ounce can pineapple rings in juice not syrup; save the juice
  • 1/2 cup light brown sugar packed
  • oil or cooking spray for greasing the baking dish

Instructions
 

  • Heat the oven to 375°F and lightly grease a medium 9x13-inch casserole dish with oil or cooking spray.
  • Pat the pork chops dry on both sides with paper towels, then lay them in one layer in the prepared dish with a little space between them if possible.
  • Open the can of pineapple rings, pour the juice into a small bowl or measuring cup, and set the pineapple rings aside.
  • Add the packed light brown sugar to the pineapple juice and stir with a fork or whisk until most of the sugar dissolves, then pour the mixture evenly over and around the pork chops.
  • Place one pineapple ring on top of each pork chop, tucking any extra rings around the chops in the open spaces.
  • Loosely cover the dish with foil, making a small tent so it does not stick to the pineapple, and bake for 20 minutes.
  • Carefully remove the foil, spoon some of the pan juices over the pork chops and pineapple rings, and return the dish to the oven uncovered for another 20 to 25 minutes.
  • The pork chops are done when the thickest part reaches at least 145°F on an instant-read thermometer, the sauce is bubbling and glossy, and the pineapple is deep golden in spots.
  • For more color on the pineapple, move the dish to the top rack and broil on high for 2 to 3 minutes, watching closely so the brown sugar does not burn.
  • Let the pork chops rest for about 5 minutes before serving, then spoon the sweet pineapple sauce over each chop and place a pineapple ring on top.

Notes

Store leftovers in a shallow covered container in the refrigerator within 2 hours. Reheat a pork chop with some sauce in a covered dish until hot all the way through, adding a spoonful of sauce over the chop before reheating so it does not dry out; the microwave works for a quick lunch, but the oven is gentler on the meat.
