Ingredients
  

  • 3 lb bone-in skin-on chicken thighs and drumsticks or all thighs
  • 1 packet dry onion soup mix about 1 oz
  • 1 can condensed cream of chicken soup 10.5 oz

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13-inch or oval casserole dish.
  • Arrange the chicken pieces in a single layer in the prepared dish, skin side up as much as possible.
  • In a bowl, stir the dry onion soup mix into the condensed cream of chicken soup until fully combined.
  • Spread the soup mixture over the chicken pieces, distributing it evenly.
  • Cover the dish tightly with foil.
  • Bake covered for 45 minutes.
  • Remove the foil and continue baking uncovered for 25–35 minutes, until the chicken reaches 175°F in the thickest part.
  • Bake until the skin is browned and the sauce is bubbling and darkened around the edges.
  • Let the chicken rest for at least 5 minutes before serving.
  • Spoon the dark pan sauce over the chicken when plating.

Notes

All thighs work especially well because they stay juicy and tolerate longer baking. Keep the foil tight during the first bake to prevent drying.
