Ingredients
  

  • 2 1/2 to 3 pounds boneless, skinless chicken breasts about 6 medium pieces, sliced horizontally into 3/4-inch cutlets if especially thick
  • 2 cans condensed cream of mushroom soup 10.5 ounces each
  • 1 cup heavy cream or half-and-half for a slightly lighter sauce

Instructions
 

  • Heat the oven to 350°F and lightly grease a 2 1/2- to 3-quart oval or rectangular baking dish so the chicken will not stick.
  • Trim away any obvious excess fat from the chicken breasts, slice especially thick pieces horizontally into about 3/4-inch cutlets, and pat the chicken dry with paper towels.
  • Place the chicken in one snug layer in the prepared baking dish, letting the pieces touch but avoiding overlap so they cook evenly.
  • In a medium bowl, whisk together the condensed cream of mushroom soup and heavy cream until smooth, thick, and pourable.
  • Pour the creamy mushroom mixture evenly over the chicken, making sure each piece is covered and the sauce runs down around the sides, then smooth the top with a spatula or the back of a spoon.
  • Bake uncovered on the middle rack for 40 to 50 minutes, until the sauce bubbles around the edges and the top is lightly golden in spots.
  • Check the thickest piece of chicken with an instant-read thermometer; it should reach 165°F, or the center should show no pink and the juices should run clear.
  • For a deeper golden top, bake for another 5 to 10 minutes while watching closely so the edges do not scorch.
  • Let the casserole rest for 5 to 10 minutes before serving so the sauce thickens slightly and the chicken stays juicier, then spoon plenty of sauce over each piece.

Notes

Leftovers keep well covered tightly in the refrigerator for up to 3 to 4 days; cool and refrigerate within 2 hours. Reheat individual portions gently in the microwave until the chicken reaches 165°F, adding a tiny splash of cream or milk if the sauce has thickened too much, or reheat the whole casserole covered in a 350°F oven until hot throughout.
