Ingredients

  • 6 boneless skinless chicken breasts on the thicker side
  • 1 to 1 1/4 cups ketchup
  • 1 cup lemon-lime soda such as Sprite or 7-Up

Instructions

  • Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish with cooking spray.
  • Arrange the chicken breasts in a single layer in the prepared baking dish without stacking or crowding them.
  • In a bowl or large measuring cup, stir together the ketchup and lemon-lime soda until the foam settles and the sauce is mostly smooth.
  • Pour the sauce evenly over the chicken, making sure each piece is coated.
  • Bake uncovered for 45–55 minutes, until the sauce is bubbling, sticky, and darkened around the edges.
  • Check that the chicken reaches 165°F at the thickest point.
  • Let the chicken rest in the dish for 5 minutes.
  • Spoon the warm pan sauce over each piece before serving.

Notes

Use thicker chicken breasts so they stay juicy while the sauce reduces. Serve with rice, mashed potatoes, or buttered noodles.
