Ingredients
  

  • 2 cans corned beef about 12 oz each
  • 4 large russet potatoes peeled and thinly sliced
  • 1 medium onion thinly sliced
  • 2 to 3 tbsp water optional, if potatoes are thick-cut or very starchy

Instructions
 

  • Preheat the oven to 375°F and grease a 9x13-inch baking dish.
  • Arrange a layer of thinly sliced potatoes in the bottom of the dish, overlapping slightly.
  • Add a thin layer of sliced onion over the potatoes.
  • Break up some of the canned corned beef and scatter it over the onions.
  • Repeat the layers of potatoes, onion, and corned beef until all ingredients are used, ending with potatoes on top if possible.
  • Optional: Add 2–3 tablespoons water to the dish if the potatoes are thick-cut or very starchy.
  • Cover the dish tightly with foil.
  • Bake covered for 1 hour.
  • Remove the foil and bake for another 20–30 minutes, until the top is browned and the potatoes are fork-tender.
  • Let the bake rest for 10 minutes before scooping and serving.

Notes

Slice the potatoes thinly so they soften evenly. A small splash of water helps create steam and prevents the bottom layer from drying out.
