Ingredients
  

  • 1 cup unsalted butter
  • 1/2 cup brown sugar packed
  • 1 tsp vanilla extract
  • 3 cup quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter creamy or chunky

Instructions
 

  • Grease or line an 8x8-inch square pan with parchment paper.
  • In a medium saucepan over medium heat, melt the butter. Stir in brown sugar and vanilla extract.
  • Add oats and cook for 2–3 minutes, stirring constantly. Remove from heat.
  • Press half of the oat mixture into the bottom of the prepared pan and set aside.
  • In a small saucepan or microwave-safe bowl, melt chocolate chips and peanut butter together, stirring until smooth.
  • Pour the chocolate mixture over the oat base and spread evenly.
  • Crumble the remaining oat mixture over the chocolate layer and press down gently.
  • Refrigerate for at least 2 hours or until firm. Cut into bars and serve.

Notes

For a nut-free version, substitute sunflower seed butter and use allergy-friendly chocolate chips.
