Mom’s Chicken Marinade

A bold, savory chicken marinade made with olive oil, soy sauce, lemon, mustard, smoky seasoning, and pantry spices. It keeps boneless chicken flavorful and juicy whether baked or grilled.

Ingredients
  

  • 1/2 cup olive oil
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup fresh lemon juice about 1 large lemon
  • 2 tbsp whole-grain mustard
  • 2 tsp Dijon mustard
  • 2 tsp liquid smoke
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 4 boneless skinless chicken breasts

Instructions
 

  • Place the chicken breasts in a large resealable food-storage bag or a covered nonreactive container.
  • In a bowl or liquid measuring cup, whisk together the olive oil, soy sauce, lemon juice, whole-grain mustard, Dijon mustard, liquid smoke, garlic powder, onion powder, black pepper, and salt.
  • Pour the marinade over the chicken, seal the bag or container, and turn the chicken until evenly coated.
  • Refrigerate for at least 2 hours and up to 24 hours.
  • When ready to cook, preheat the oven or grill to 400°F.
  • Remove the chicken from the marinade and discard the used marinade.
  • To bake, arrange the chicken in a baking dish and cook for about 22–25 minutes. To grill, cook until browned and fully cooked, turning once.
  • Check that the thickest part of each chicken breast reaches 165°F.
  • Let the chicken rest for 5 minutes before slicing and serving.

Notes

Marinating for 3–8 hours gives excellent flavor without softening the chicken excessively. Never reuse marinade that has touched raw chicken unless it is boiled thoroughly first.
