Modernized Old-Fashioned Yeast Rolls

Ingredients

  • 3 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 1/3 cup half and half warmed gently
  • 6 tablespoons butter melted
  • 1/3 cup warm water
  • 2 large eggs beaten
  • 1/2 teaspoon vanilla extract
  • 3 1/2 teaspoons Fleischmann’s active dry yeast or 2 packets
  • butter for lightly basting the baked rolls

Instructions

  • Add the ingredients to your bread machine in this order: flour, sugar, salt, warmed half and half, melted butter, warm water, beaten eggs, vanilla extract, and finally the active dry yeast, keeping the yeast separate from the liquid until the machine begins working.
  • Set the machine to the bread dough cycle and let it knead and rise the dough.
  • When there are 15 minutes left on the bread dough cycle, preheat the oven to 375°F and grease 12 cups of a cupcake pan well with butter or cooking spray.
  • When the dough cycle is finished, turn the soft, slightly sticky dough out onto a floured surface and lightly dust the top with flour without adding enough to make it stiff.
  • Cut the dough into 36 roughly even pieces.
  • Place 3 pieces of dough into each greased cupcake mold, nestling them together so they puff into pull-apart rolls as they bake.
  • Bake for 18 to 22 minutes, until the rolls are golden on top, checking around 18 minutes.
  • Remove the rolls from the oven and lightly baste them with butter while warm, then let them cool a bit before serving.

Notes

Keep leftover rolls in an airtight container or zip-top bag at room temperature for a couple of days. To reheat, wrap a few rolls loosely in foil and warm them in a low oven until heated through, or microwave one briefly for about 10 to 15 seconds. After day two, split and toast any remaining rolls with butter or jam.
