This Microwave Chocolate Pie is rich, creamy, and wonderfully easy, with a smooth chocolate custard filling made in the microwave and poured into an Oreo crust. It chills into a silky dessert that slices beautifully and disappears fast.

Ingredients
  

  • 1/2 cup heavy cream
  • 1 1/2 cups milk
  • 1/2 cup sugar
  • 2 tablespoons powdered sugar
  • 4 to 6 (1-ounce) squares semisweet baking chocolate chopped into small pieces
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons strong black coffee or Kahlua optional
  • 1 1/2 to 2 cups finely crushed Oreos for the homemade crust
  • 4 tablespoons butter melted
  • whipped cream or dessert topping for serving
  • 1 premade chocolate or Oreo cookie crust optional, if skipping the homemade crust

Instructions
 

  • Chop the semisweet baking chocolate into small pieces with a sharp knife and set it aside nearby.
  • In a large microwave-safe glass bowl, whisk together the heavy cream, milk, egg yolks, sugar, powdered sugar, cornstarch, and salt until smooth and well blended.
  • Microwave the mixture on high for 3 minutes, using a 1000-watt microwave as the timing guide.
  • Carefully remove the warm bowl and whisk well, then microwave in 1-minute increments, whisking after every minute, until the custard thickens like pudding, up to 6 additional minutes.
  • Once the custard is thick, stir in the vanilla extract until incorporated.
  • Add the chopped chocolate to the hot custard and stir until completely melted and the filling is smooth, dark, and glossy, then stir in the coffee or Kahlua if using.
  • If making the homemade Oreo crust, mix the finely crushed Oreos with the melted butter and press the mixture firmly into a pie plate across the bottom and up the sides.
  • Pour the hot chocolate filling into the homemade crust or a premade chocolate or Oreo cookie crust, then refrigerate until chilled and set.
  • Serve the chilled pie with whipped cream or dessert topping over the top.

Notes

Keep leftover pie covered in the refrigerator, stored right in the pie plate with foil loosely over the top. It is best within a few days and should be served chilled; do not microwave slices. Add a fresh dollop of whipped cream or dessert topping when serving if needed.
