Mayonnaise Roasted Potatoes

Ingredients
  

  • 3 pounds baby potatoes
  • 1 cup mayonnaise
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • Preheat oven to 425°F. Wash and scrub potatoes, then pat dry.
  • In a large bowl, mix together mayo, parsley, garlic powder, onion powder, paprika, salt, and pepper until smooth.
  • Add potatoes and toss until well coated.
  • Spread potatoes on a rimmed baking sheet in a single layer.
  • Bake for 20-25 minutes or until potatoes are tender.
  • Switch oven to broil and cook until skins are golden, shaking the pan occasionally. Watch closely.
  • Toss with extra salt and pepper, if desired. Serve warm.

Notes

Substitute with Greek yogurt or sour cream for a tangier twist. Goes great with grilled chicken or fish.
