baby potatoes

mayonnaise
1
teaspoon
dried parsley
1/2
teaspoon
garlic powder
1/2
teaspoon
onion powder
1/4
teaspoon
paprika
Kosher salt and freshly ground black pepper, to taste
Instructions
Preheat oven to 425°F. Wash and scrub potatoes, then pat dry.
In a large bowl, mix together mayo, parsley, garlic powder, onion powder, paprika, salt, and pepper until smooth.
Add potatoes and toss until well coated.
Spread potatoes on a rimmed baking sheet in a single layer.
Bake for 20-25 minutes or until potatoes are tender.
Switch oven to broil and cook until skins are golden, shaking the pan occasionally. Watch closely.
Toss with extra salt and pepper, if desired. Serve warm.
Notes
Substitute with Greek yogurt or sour cream for a tangier twist. Goes great with grilled chicken or fish.
