This refreshing salad combines crisp cucumbers, juicy tomatoes, and tangy onions in a simple vinegar-based marinade. It’s a perfect side dish for picnics, barbecues, or light meals.
1/2cupdistilled white vinegaror apple cider vinegar
1/4cupvegetable oil
1/4cupsugar
2teaspoonssalt
1tablespoonfreshly ground black pepper
3cucumberspeeled and sliced into 1/4-inch thick rounds
3tomatoescut into wedges
1onionsliced into rings
Instructions
In a large mixing bowl, whisk together water, vinegar, vegetable oil, sugar, salt, and pepper. Continue whisking until the sugar and salt are completely dissolved.
Add the prepared cucumbers, tomatoes, and onions to the bowl. Toss gently to coat the vegetables evenly in the marinade.
Cover the bowl with plastic wrap or a lid. Refrigerate for at least 2 hours to let the vegetables absorb the flavors.
Stir the salad to redistribute the marinade before serving. Serve chilled as a side dish.
Notes
