Ingredients
  

  • 1 cup water
  • 1/2 cup distilled white vinegar or apple cider vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 tablespoon freshly ground black pepper
  • 3 cucumbers peeled and sliced into 1/4-inch thick rounds
  • 3 tomatoes cut into wedges
  • 1 onion sliced into rings

Instructions
 

  • In a large mixing bowl, whisk together water, vinegar, vegetable oil, sugar, salt, and pepper. Continue whisking until the sugar and salt are completely dissolved.
  • Add the prepared cucumbers, tomatoes, and onions to the bowl. Toss gently to coat the vegetables evenly in the marinade.
  • Cover the bowl with plastic wrap or a lid. Refrigerate for at least 2 hours to let the vegetables absorb the flavors.
  • Stir the salad to redistribute the marinade before serving. Serve chilled as a side dish.

Notes

For extra flavor, add a few sprigs of fresh dill or a pinch of red pepper flakes to the marinade. Store leftovers in the refrigerator for up to 3 days.
