Instructions
In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture firmly into the bottom and sides of a 9-inch pie dish to form a crust. Chill while preparing the filling.
In a large bowl, beat the softened cream cheese until smooth and creamy.
Gradually add the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract, beating until fully incorporated.
Pour the filling into the prepared crust and smooth the top with a spatula.
Chill in the refrigerator for at least 4 hours, or until fully set.
Notes
Top with whipped cream and thin lemon slices for extra flair before serving.
