Ingredients
  

  • 1.5 cups graham cracker crumbs finely crushed
  • 1/3 cup unsalted butter melted
  • 2 tbsp granulated sugar
  • 2 packages cream cheese 8 oz each, softened
  • 1 can sweetened condensed milk 14 oz
  • 1/4 cup fresh lemon juice strained
  • 1 tbsp lemon zest from about 1 large lemon
  • 1 tsp vanilla extract

Instructions
 

  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
  • Press the mixture firmly into the bottom and sides of a 9-inch pie dish to form a crust. Chill while preparing the filling.
  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract, beating until fully incorporated.
  • Pour the filling into the prepared crust and smooth the top with a spatula.
  • Chill in the refrigerator for at least 4 hours, or until fully set.

Notes

Top with whipped cream and thin lemon slices for extra flair before serving.
