Ingredients
  

  • 1 box lemon cake mix about 15.25 oz
  • 1 box instant lemon pudding mix 3.4 oz
  • 4 eggs large
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar for glaze
  • 2 tbsp lemon juice freshly squeezed

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, combine lemon cake mix, lemon pudding mix, eggs, water, and oil. Mix until well blended.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is still warm, whisk together powdered sugar and lemon juice to make the glaze.
  • Drizzle glaze evenly over the warm cake. Allow to cool before slicing and serving.

Notes

Try adding lemon zest to the batter for extra flavor or top with whipped cream and fresh berries for a springtime touch.
