Ingredients

  • 1 lb ground beef lean
  • 1 packet taco seasoning mix about 1 oz
  • 1/2 cup water
  • 1 cup salsa your preferred heat level
  • 6 flour tortillas 6-inch size
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup refried beans warmed slightly for easier spreading

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Add taco seasoning and water to the beef. Simmer for 5 minutes, then stir in salsa.
  • Place two tortillas at the bottom of the baking dish, overlapping as needed. Spread a layer of refried beans, then beef mixture, then cheese. Repeat layers, finishing with cheese on top.
  • Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
  • Let sit for 5 minutes before slicing. Garnish with green onions, if desired.

Notes

Swap ground beef for ground turkey or black beans for a lighter or vegetarian option.
