Ingredients
  

  • 4 cups frozen peas thawed
  • 1 cup cheddar cheese diced
  • 1/2 cup celery chopped
  • 1/2 cup red bell pepper chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • salt and black pepper to taste

Instructions
 

  • In a large bowl, combine the thawed peas, diced cheddar cheese, chopped celery, chopped red bell pepper, and finely chopped red onion.
  • In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.
  • Pour the dressing over the pea and vegetable mixture, gently tossing to coat all ingredients evenly.
  • Refrigerate for at least an hour before serving to allow the flavors to meld together.
  • Give the salad a gentle stir before serving. Enjoy!

Notes

For extra texture and a salty crunch, try topping with crispy bacon bits or sunflower seeds just before serving. This salad travels well and can be made a day ahead.
