Ingredients
  

  • 2 to 3 pounds boneless, skinless chicken breasts or boneless, skinless chicken thighs
  • 1 cup chicken broth or water; use low-salt or homemade if preferred
  • salt to taste
  • black pepper to taste
  • garlic powder to taste
  • onion powder to taste
  • 1/2 tablespoon olive oil optional, for extra tender chicken

Instructions
 

  • Place 2 to 3 pounds of chicken breasts in the Instant Pot insert, nestling them in evenly without piling them all in one spot.
  • Pour in 1 cup of chicken broth or water to help the pressure cooker work properly and keep the chicken juicy.
  • Sprinkle the chicken with salt, black pepper, garlic powder, and onion powder, then stir lightly if desired or leave as is.
  • Lock the lid, set the valve to sealing, and cook on Manual or Pressure Cook for 10 minutes for fresh chicken, adding 2 to 3 extra minutes for very large thick pieces or cooking for 15 minutes if frozen.
  • Let the Instant Pot naturally release for 5 to 7 minutes after cooking, then carefully switch the valve to quick release to release the remaining steam.
  • Transfer the chicken to a bowl and shred it with two forks, or use a hand mixer on low speed for about a minute for a larger batch.
  • If the shredded chicken looks a little dry, ladle in a tablespoon or two of the cooking liquid and toss well before serving or storing.

Notes

Let the chicken rest a few minutes before shredding so it stays juicy and is easier to handle. Store cooled shredded chicken in an airtight container with a little cooking liquid in the refrigerator for up to 4 days. To freeze, portion into freezer bags or containers, press out as much air as possible, date, and freeze for up to 3 months. Reheat with a splash of broth or water in the microwave in short bursts, tossing between bursts, or warm gently in a covered skillet with a splash of liquid.
