Ingredients
  

  • 1 cup Lentils (Dal) yellow split lentils (toor dal), red split lentils (masoor dal), or yellow split peas
  • 1 onion, 3 cloves garlic, 1 tbsp ginger Onion, garlic & ginger fresh ginger, diced fine
  • 2 medium Tomatoes fresh or canned, diced
  • 2 tsp Spices cumin, turmeric, ground coriander, chili powder
  • 2 tbsp Vegetable oil or ghee ghee for richness, any neutral oil works
  • 3 cups Stock or water vegetable or chicken stock
  • 1/4 cup Fresh cilantro and lemon chopped cilantro and lemon juice for finishing

Instructions
 

  • Rinse lentils under cool water until mostly clear to cook up creamy.
  • Sauté onion, garlic, and ginger until fragrant.
  • Toast cumin, turmeric, coriander, and chili powder until fragrant.
  • Cook diced tomatoes until softened.
  • Simmer lentils in stock until soft and soup-like.
  • Season with salt, adjust consistency, and finish with cilantro and lemon.

Notes

Serve with rice, naan, or yogurt. Optional variations include adding extra veggies or protein.
