chopped (or 1 tbsp dried basil)

optional, to balance acidity
Instructions
Heat olive oil in a large saucepan over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for another 1–2 minutes until fragrant.
Add the tomatoes, salt, pepper, oregano, and sugar (if using). Stir to combine.
Reduce heat to low and simmer uncovered for 35–40 minutes, stirring occasionally until thickened.
Stir in chopped fresh basil during the last 5 minutes of cooking.
Taste and adjust seasoning if needed. Use immediately or cool and store.
Notes
This sauce can be frozen for up to 3 months. Try adding a pinch of chili flakes for extra heat.
