Ingredients
  

  • 2 tablespoons smoked paprika or regular paprika
  • 1 teaspoon cayenne pepper use more or less to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly cracked if possible
  • 1 teaspoon lemon zest optional; use fresh if using quickly or dried lemon peel for longer storage
  • 1 pinch sugar optional, to balance the blend

Instructions
 

  • Gather all of the spices and set out a medium bowl or the clean airtight jar you plan to use for storage.
  • Measure the smoked paprika and cayenne pepper into the bowl or jar, adjusting the cayenne if you prefer a milder or hotter blend.
  • Add the garlic powder, onion powder, dried oregano, dried basil, salt, and black pepper.
  • If using, add the lemon zest or dried lemon peel and a pinch of sugar for extra citrusy brightness and balance.
  • Whisk the spices together until evenly blended, or stir thoroughly with a fork.
  • For an ultra-smooth seasoning, blitz the mixture briefly in a mini food processor until it becomes a finer powder.
  • Taste a small pinch and adjust with more cayenne, lemon zest, or salt as desired.
  • Transfer the finished Peri Peri Seasoning to a clean airtight jar or spice container, label it, and store it in a cool, dry cupboard.

Notes

Store the seasoning in a clean airtight jar or spice container in a cool, dark pantry away from the stove for up to 3 months. If using fresh lemon zest, use the batch within 1 to 2 weeks for the freshest flavor. No reheating is needed; sprinkle a pinch over leftovers before serving to wake up the flavors.
