Ingredients
  

  • 1 lb ground beef lean preferred
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 2 cups potatoes diced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 can corn 15 oz, drained
  • 1 can pinto beans 15 oz, drained and rinsed
  • 1 can kidney beans 15 oz, drained and rinsed
  • 4 cups beef broth low sodium
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1 tsp salt or to taste

Instructions
 

  • In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  • Transfer the beef to the crockpot. Add chopped onion, minced garlic, and diced potatoes.
  • Add canned tomatoes, corn, pinto beans, and kidney beans to the pot.
  • Pour in beef broth and stir in chili powder, cumin, salt, and pepper.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender.
  • Taste and adjust seasoning before serving. Serve hot with crusty bread or crackers.

Notes

For extra heat, add a diced jalapeño or a pinch of red pepper flakes when adding spices.
