Ingredients
  

  • 1 lb breakfast sausage crumbled and cooked
  • 6 eggs large
  • 2 cups milk whole or 2%
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 package frozen hash browns about 30 oz, thawed
  • 2 cups shredded cheddar cheese divided
  • 1/2 cup diced onion optional

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook the sausage in a skillet over medium heat until browned. Drain excess fat and set aside.
  • In a large bowl, whisk together eggs, milk, salt, and pepper.
  • Add thawed hash browns, cooked sausage, 1 1/2 cups of cheddar cheese, and onion (if using) to the egg mixture. Stir to combine.
  • Pour the mixture into the prepared baking dish and spread evenly. Top with the remaining 1/2 cup of cheese.
  • Bake uncovered for 45–50 minutes or until the center is set and the top is golden brown. Let rest for 5–10 minutes before serving.

Notes

Swap sausage for cooked bacon or make it vegetarian by using plant-based sausage and omitting meat.
