Ingredients
  

  • 1 cup butter softened
  • 2 cups granulated sugar plus extra sugar for rolling the cookies
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F and leave your cookie sheets ungreased.
  • In the bowl of a mixer, cream together the softened butter and 2 cups of granulated sugar until light and fluffy, scraping down the bowl once as needed.
  • Add the eggs and vanilla extract, then blend until the batter is soft and fluffy again.
  • Add the cocoa powder, flour, baking soda, and salt, then stir until a thick, well-formed chocolate dough forms.
  • Put extra granulated sugar in a small bowl, roll a teaspoonful of dough into a small ball, and roll it in the sugar until coated all over.
  • Place the sugar-coated dough balls about 2 inches apart on the ungreased cookie sheets so they have room to spread.
  • Bake small cookies for 8 minutes, or bake larger dough balls for 10 minutes, removing them before the centers look fully done so they stay fudgy.
  • Let the cookies cool on the baking sheet for 1 minute before moving them to a cooling rack.
  • If your kitchen is warm, keep the dough in the refrigerator between batches so it does not become too soft.

Notes

Keep cooled cookies in an airtight container at room temperature for several days. Freeze baked cookies once completely cool and thaw on the counter, or microwave one for just a few seconds, about 10 seconds, for a softer just-baked texture. Refrigerate the dough between batches if your kitchen is warm.
