Garlic Roasted Okra

Garlic Roasted Okra is a crisp-edged, lemon-bright vegetable side dish packed with plenty of garlic and fresh herbs. High oven heat helps the okra roast instead of steam, giving it a golden, lightly crisp finish without frying or breading.

Ingredients
  

  • 2 pounds fresh okra trimmed and cut into 1/2-inch pieces
  • 1 lemon juiced
  • 1/2 cup olive oil
  • 6 cloves garlic minced
  • 1 to 2 jalapeños seeded and sliced, optional
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fresh oregano chopped
  • 1 teaspoon fresh thyme chopped
  • 1/2 teaspoon crushed red pepper
  • salt and black pepper to taste

Instructions
 

  • Preheat the oven to 450°F and set out a large 11-by-15-inch metal baking pan for better browned edges.
  • Trim the stem ends from the okra and cut the pods into roughly 1/2-inch pieces, then pat the cut okra very dry with paper towels.
  • Place the dried okra in a large bowl and toss it with the lemon juice until all the pieces are coated.
  • Add the olive oil, minced garlic, optional sliced jalapeños, rosemary, sage, oregano, thyme, crushed red pepper, salt, and black pepper to the bowl.
  • Toss everything together until the okra is evenly coated and the herbs are distributed throughout the mixture.
  • Pour the okra mixture onto the 11-by-15-inch baking pan and spread it into an even layer, avoiding piling or crowding so the vegetables roast instead of steam.
  • Scatter any herbs and garlic left in the bowl over the top of the okra.
  • Roast for 20 to 25 minutes, until the tops of the okra are golden brown and lightly crisp, then serve hot with the browned garlic and herbs spooned over each portion.

Notes

Store leftovers in a covered container in the refrigerator for about 3 days. For best texture, avoid the microwave and reheat the okra spread out on a baking pan in a hot oven, around 400°F, until warmed through and the edges perk up again. Cold leftovers are also good in a grain bowl or alongside scrambled eggs.
