Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 head romaine lettuce chopped
  • 2 cups Fritos corn chips
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup cherry tomatoes halved
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1/2 cup Catalina dressing or ranch dressing

Instructions
 

  • Cook the ground beef in a large skillet over medium heat until browned and fully cooked.
  • Drain excess grease, then stir in the taco seasoning according to package directions.
  • Let the seasoned beef cool slightly.
  • In a large serving bowl, combine the chopped romaine lettuce, Fritos, shredded cheddar cheese, cherry tomatoes, and kidney beans.
  • Add the seasoned beef to the salad.
  • Drizzle with Catalina dressing or ranch dressing.
  • Toss gently until everything is evenly coated.
  • Serve immediately so the Fritos stay crunchy.

Notes

Add avocado, sliced olives, or green onions for extra flavor. Keep the chips and dressing separate until serving for the best crunch.
