Easy Peach Jam

This Easy Peach Jam is a bright, fresh freezer jam made with peaches, lemon juice, powdered pectin, and sugar. It makes about 4 cups for the refrigerator or freezer with no canning equipment required.

Ingredients
  

  • 24 ounces fresh peaches peeled, pitted, and diced
  • 2 tablespoons lemon juice preferably fresh
  • 1.75 ounces Sure-Jell powdered pectin
  • 3 cups granulated sugar use all of it

Instructions
 

  • Peel, pit, and dice the peaches, then place them in a large pot.
  • Use a potato masher or sturdy fork to crush the peaches to your preferred consistency, leaving a few small chunks or mashing them smoother if desired.
  • Stir in the lemon juice and powdered pectin until evenly mixed, scraping around the bottom of the pot to remove any dry pockets of pectin.
  • Set the pot over medium-high heat and stir constantly as the peach mixture heats and comes to a boil.
  • Once the peaches come to a boil, add all 3 cups of sugar at once and stir until completely dissolved.
  • Bring the jam back to a full rolling boil that cannot be stirred down, then boil for 1 minute while stirring constantly.
  • Remove the pot from the heat and carefully skim any foam from the surface.
  • Pour the hot jam into clean mason jars, leaving about 1/2 inch of space at the top, then wipe the rims clean and seal with lids.
  • Let the jars cool completely to room temperature before moving them to the refrigerator or freezer; do not store this freezer jam on the pantry shelf.

Notes

This peach jam is freezer jam, not shelf-stable canned jam. Store sealed jars in the refrigerator for up to 3 weeks or freeze for up to 6 months. To thaw, transfer a jar to the refrigerator overnight; no reheating is needed. Label jars before freezing.
