Ingredients
  

  • 1 1/2 lb boneless skinless chicken breasts or thighs
  • 2 cans (15 oz each) great northern beans drained and rinsed
  • 1 can (4 oz) diced mild green chiles
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1 tsp salt or to taste
  • 1/4 tsp black pepper
  • 4 oz cream cheese softened and cubed
  • Monterey Jack, sour cream, green onions, tortilla chips for topping

Instructions
 

  • Add the chicken, beans, chiles, onion, garlic, corn, broth and spices to a 6-quart slow cooker.
  • Cover and cook on LOW 6 to 7 hours or HIGH 3 to 4 hours.
  • Shred the chicken with two forks and return it to the pot.
  • Stir in the cream cheese, cover 15 minutes, then stir until melted.
  • Season to taste and serve with your favorite toppings.

Notes

Keeps 4 days in the fridge or 3 months in the freezer.
