Crockpot Chicken and Dumplings

Ingredients
  

  • 1 ½ lb chicken breasts boneless and skinless
  • 2 cups chicken broth
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup onion diced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 1 can refrigerated biscuit dough 16 oz, cut into small pieces
  • ½ cup frozen peas optional, stirred in at the end

Instructions
 

  • Place chicken breasts in the bottom of the crockpot.
  • Add chicken broth, cream of chicken soup, onion, carrots, celery, garlic powder, thyme, and pepper. Stir to combine.
  • Cover and cook on low for 5 hours.
  • Remove chicken, shred with two forks, and return to crockpot.
  • Add biscuit dough pieces on top of the mixture. Gently press them into the liquid without stirring.
  • Cover and cook for another 1 hour on high, or until biscuits are cooked through.
  • Stir in frozen peas (if using) and cook for 5 more minutes. Serve warm.

Notes

For extra flavor, add a bay leaf while cooking (remove before serving), or substitute cream of celery soup for added depth.
