Crockpot Beef and Broccoli

Ingredients
  

  • 1.5 lb flank steak thinly sliced against the grain
  • 1 cup beef broth low sodium preferred
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar packed
  • 1 tbsp sesame oil
  • 4 cloves garlic minced
  • 2 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 4 cups broccoli florets fresh or frozen
  • 1 tsp fresh ginger grated
  • 1 green onion sliced, for garnish (optional)

Instructions
 

  • In a small bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
  • Place sliced flank steak into the crockpot and pour sauce mixture over the top.
  • Cover and cook on low for 4.5 to 5 hours until beef is tender.
  • In a small bowl, mix cornstarch and water to form a slurry. Stir into crockpot and cook for an additional 20–30 minutes until sauce thickens.
  • Add broccoli florets in the last 30 minutes of cooking. Stir to combine.
  • Serve hot over rice and garnish with green onion if desired.

Notes

For extra flavor, add a splash of oyster sauce or a pinch of red pepper flakes.
