Ingredients
  

  • 4 boneless skinless chicken breasts about 2 lbs total
  • 1 tsp kosher salt divided
  • 1/2 tsp black pepper divided
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes oil-packed, drained and chopped
  • 3/4 cup Parmesan cheese grated
  • 1 1/2 tsp Italian seasoning
  • 3 cloves garlic minced
  • 2 tbsp olive oil or tomato oil
  • 1/4 tsp crushed red pepper flakes optional
  • 1 tbsp fresh parsley or basil chopped, optional

Instructions
 

  • Preheat oven to 400°F (200°C) and grease a baking dish.
  • Pat chicken dry and place in dish. Season with half the salt and pepper.
  • Mix cream, sun-dried tomatoes, Parmesan, seasoning, garlic, oil, remaining salt and pepper, and red pepper flakes.
  • Pour sauce over chicken evenly.
  • Cover with foil and bake 15 minutes.
  • Uncover and bake 15–20 minutes more until fully cooked.
  • Optional: broil briefly for browning.
  • Rest 5 minutes and serve with sauce spooned over.

Notes

Serve over pasta or rice. Add spinach or mushrooms for extra flavor and texture.
