Creamy Seafood Salad with Imitation Crab

Ingredients
  

  • 1 pound imitation crab meat shredded
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup sweet corn kernels
  • 1 tablespoon fresh dill chopped, optional
  • salt and pepper to taste
  • lettuce leaves for serving

Instructions
 

  • In a large mixing bowl, combine the mayonnaise, lemon juice, and Dijon mustard. Stir until smooth.
  • Add the shredded imitation crab meat to the bowl and gently fold it into the mayonnaise mixture.
  • Stir in the chopped celery, red onion, and sweet corn kernels until well combined.
  • Season the salad with salt and pepper to taste. If using, add the fresh dill and mix gently.
  • Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  • Serve the seafood salad on a bed of lettuce leaves for a refreshing touch.

Notes

For a lighter version, substitute half the mayonnaise with plain Greek yogurt. You can also serve this mixture in wraps or stuffed inside a halved avocado.
