Ingredients
  

  • 1 lb ground beef browned and drained
  • 4 cups russet potatoes peeled and diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 small onion chopped
  • 4 cups chicken broth low sodium preferred
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 1/2 cups milk whole or 2%
  • 3 tbsp all-purpose flour for thickening
  • 1 cup shredded cheddar cheese optional, for extra richness

Instructions
 

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Place the cooked beef, diced potatoes, carrots, celery, and onion into the crockpot.
  • Pour in the chicken broth and stir in salt, pepper, garlic powder, and Italian seasoning.
  • Cover and cook on low for 6–7 hours or until vegetables are tender.
  • In a small bowl, whisk together milk and flour until smooth. Stir into the soup during the last 30 minutes of cooking.
  • Optional: Stir in shredded cheddar cheese just before serving for added richness.

Notes

Swap cheddar with cream cheese for a tangier twist, or use ground turkey for a lighter version.
