Classic Chicken Salad

This classic chicken salad is creamy, fresh, and packed with flavor. Tender shredded chicken is tossed with crunchy celery, red onion, fresh dill, and a creamy dressing brightened with lemon and Dijon mustard. Perfect for sandwiches, wraps, or served over crisp lettuce.

Ingredients
  

  • 1 large celery stalk diced
  • 1/2 medium red onion finely diced (or 3 scallions sliced)
  • 1/2 cup seedless red grapes quartered (optional)
  • 1/2 medium lemon juiced (about 1 tablespoon)
  • 4 sprigs fresh dill chopped
  • 1 pound cooked chicken shredded (about 3 cups)
  • 3/4 cup mayonnaise or 1/2 cup Greek yogurt + 1/4 cup mayo
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp celery seeds optional
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • Dice the celery and add it to a medium mixing bowl.
  • Finely dice the red onion (or slice scallions) and add to the bowl.
  • Quarter the grapes if using and add them to the bowl.
  • Juice half the lemon to get about 1 tablespoon and add it to the mixture.
  • Pick and chop the dill fronds and add them to the bowl.
  • Add the shredded chicken, mayonnaise (or yogurt and mayo combination), Dijon mustard, and celery seeds if using.
  • Stir everything together until evenly combined.
  • Taste and season with kosher salt and freshly ground black pepper as needed.

Notes

This chicken salad tastes even better after chilling for an hour, allowing the flavors to blend together.
