Cinnamon Apple Cake

Ingredients
  

  • 2 cups all-purpose flour
  • 1 large apple peeled and chopped
  • 1 cup vegetable oil
  • 1 cup dark brown sugar
  • 1/2 cup granulated white sugar
  • 1/2 cup walnuts chopped
  • 2 large eggs
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F and lightly grease a 9-inch round cake pan.
  • In a medium bowl, whisk the eggs and vegetable oil until smooth.
  • Add the cinnamon, brown sugar, white sugar, and vanilla. Mix until well combined.
  • Stir in the flour, baking powder, baking soda, and salt until batter forms.
  • Fold in the chopped apple and walnuts.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool for 15 minutes before slicing and serving.

Notes

You can substitute pecans for walnuts if desired. This cake is even better the next day!
