coarsely chopped; canned chicken may be used

Instructions
Add the chopped chicken, mayonnaise, apple, celery, nuts, raisins, pineapple, and grapes to a large bowl.
Stir gently until all ingredients are evenly coated with mayonnaise.
Cover and refrigerate for at least 1 hour so the salad is thoroughly chilled and the flavors blend.
Arrange one large lettuce leaf on each serving plate.
Spoon the chilled chicken salad over the lettuce.
Serve with French bread or a warmed baguette if desired.
Notes
Drain the pineapple very well to keep the salad from becoming watery. Canned chicken may be used after draining thoroughly.
