Chicken Waldorf Salad

Ingredients
  

  • 2 cups cooked chicken coarsely chopped; canned chicken may be used
  • 1/2 cup mayonnaise
  • 1 medium red apple cut into 1/2-inch pieces
  • 1/2 cup celery thinly sliced
  • 1/4 cup walnuts or pecans chopped
  • 2 tbsp raisins optional
  • 1 can pineapple tidbits 8 oz, well drained
  • 1/2 cup red grapes halved
  • 6 large lettuce leaves for serving
  • French bread optional, for serving

Instructions
 

  • Add the chopped chicken, mayonnaise, apple, celery, nuts, raisins, pineapple, and grapes to a large bowl.
  • Stir gently until all ingredients are evenly coated with mayonnaise.
  • Cover and refrigerate for at least 1 hour so the salad is thoroughly chilled and the flavors blend.
  • Arrange one large lettuce leaf on each serving plate.
  • Spoon the chilled chicken salad over the lettuce.
  • Serve with French bread or a warmed baguette if desired.

Notes

Drain the pineapple very well to keep the salad from becoming watery. Canned chicken may be used after draining thoroughly.
