Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 cup celery diced
  • 1 cup carrots diced
  • 1/2 cup onion diced
  • 1 can cream of chicken soup 10.5 oz
  • 2 cups chicken broth low sodium preferred
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Spread shredded chicken evenly in the bottom of the dish. Top with diced celery, carrots, and onion.
  • In a bowl, whisk together cream of chicken soup and chicken broth. Pour mixture over the chicken and vegetables without stirring.
  • In another bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined to form the dumpling batter.
  • Spoon batter evenly over the casserole. Do not stir.
  • Bake uncovered for 40–45 minutes or until the top is golden and the dumplings are cooked through. Let rest 5 minutes before serving.

Notes

For extra flavor, add a dash of poultry seasoning or chopped fresh herbs to the soup layer.
