Instructions
Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
Spread shredded chicken evenly in the bottom of the dish. Top with diced celery, carrots, and onion.
In a bowl, whisk together cream of chicken soup and chicken broth. Pour mixture over the chicken and vegetables without stirring.
In another bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined to form the dumpling batter.
Spoon batter evenly over the casserole. Do not stir.
Bake uncovered for 40–45 minutes or until the top is golden and the dumplings are cooked through. Let rest 5 minutes before serving.
Notes
For extra flavor, add a dash of poultry seasoning or chopped fresh herbs to the soup layer.
