Cheesy Ranch Baked New Potatoes

Tender new potatoes are baked with ranch seasoning, olive oil, sour cream, and sharp cheddar cheese until creamy, bubbly, and golden. This easy comfort-food side dish is rich, flavorful, and perfect for family dinners, potlucks, or holiday meals.

Ingredients
  

  • 2 lb new potatoes halved, larger ones quartered
  • 1 packet ranch seasoning mix about 1 oz
  • 2 tbsp olive oil
  • 1 cup sour cream full fat
  • 2 cups shredded sharp cheddar cheese divided

Instructions
 

  • Preheat the oven to 400°F and lightly oil a 9x13-inch glass casserole dish.
  • Add the halved new potatoes to the prepared dish, quartering any larger potatoes.
  • Drizzle the olive oil over the potatoes.
  • Sprinkle the ranch seasoning evenly over the top.
  • Toss until the potatoes are evenly coated.
  • Cover the dish tightly with foil and bake for 35 minutes, until the potatoes are beginning to turn tender.
  • Remove the foil and add the sour cream and 1 1/2 cups shredded cheddar cheese directly to the hot dish.
  • Stir until the potatoes are coated and the cheese begins to melt into a creamy sauce.
  • Sprinkle the remaining 1/2 cup cheddar cheese over the top.
  • Return the dish to the oven uncovered and bake for 15–20 minutes, until bubbling around the edges and lightly browned on top.
  • Let the potatoes rest for at least 5 minutes before serving.

Notes

Use a glass baking dish to prevent over-browning on the bottom. Letting the potatoes rest helps the sauce thicken before serving.
