Cheesy Mashed Potato Puffs

These golden, bite-sized mashed potato puffs are crispy on the outside and irresistibly cheesy and creamy on the inside. Perfect as a snack, appetizer, or a fun side dish, they make excellent use of leftover mashed potatoes and come together easily in a muffin tin.

Ingredients
  

  • 2 cups mashed potatoes preferably cold or leftover
  • 2 large eggs lightly beaten
  • 1 cup shredded cheddar cheese sharp cheddar recommended
  • 1/4 cup chopped green onions plus extra for garnish
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese optional, for topping
  • non-stick cooking spray for greasing the muffin tin

Instructions
 

  • Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with non-stick spray.
  • In a large mixing bowl, combine mashed potatoes, eggs, cheddar cheese, green onions, salt, and pepper until well mixed.
  • Spoon the mixture into the mini muffin tin, filling each cup to the top. Sprinkle grated Parmesan on top if using.
  • Bake for 25–30 minutes, or until the tops are golden brown and the edges are crisp.
  • Let cool in the tin for 5 minutes before gently removing. Garnish with extra green onions and serve warm.

Notes

You can add crumbled bacon or diced ham for extra flavor. Works best with thick mashed potatoes.
