Cheesy Herb Mashed Potato Puffs

These cheesy herb mashed potato puffs are a delightful way to use up leftover mashed potatoes. They're crispy on the outside, soft and cheesy on the inside, and loaded with flavor from cheddar, Parmesan, garlic, and fresh chives. Perfect as a snack, side dish, or appetizer!

Ingredients
  

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 large eggs
  • 0.25 cup all-purpose flour
  • 2 tbsp fresh chives chopped
  • 1 tsp garlic powder
  • salt and pepper to taste
  • non-stick cooking spray

Instructions
 

  • Preheat oven to 400°F (200°C) and spray a muffin tin lightly with non-stick cooking spray.
  • In a large bowl, mix together mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, chives, garlic powder, salt, and pepper until well combined.
  • Spoon the mixture into the muffin tin cups, filling each about 3/4 full.
  • Bake for 20–25 minutes or until the tops are golden and crisp.
  • Let cool in the pan for a few minutes before removing. Serve warm.

Notes

These little puffs freeze beautifully—just pop them in a zip-top bag once cooled. Reheat in the oven or air fryer for a quick treat. Add chopped cooked bacon for a meaty twist!
