Cheddar Olive Dip

A creamy, retro-style party dip made with softened cream cheese, sharp cheddar, mayonnaise, and chopped pimento-stuffed green olives. It is rich, tangy, salty, and best after chilling so the flavors can blend.

Ingredients
  

  • 8 oz cream cheese full-fat, softened
  • 1 cup sharp cheddar cheese freshly grated
  • 1/2 cup mayonnaise
  • 1 jar pimento-stuffed green olives 4 to 6 oz, drained and chopped

Instructions
 

  • Place the softened cream cheese and mayonnaise in a mixing bowl.
  • Beat with a hand mixer or stir firmly by hand until completely smooth and creamy.
  • Fold in the shredded sharp cheddar cheese and chopped pimento-stuffed green olives by hand.
  • Stir until the cheese and olives are evenly distributed.
  • Cover the dip tightly and refrigerate for at least 2 hours, or overnight for best flavor.
  • Stir once more before serving.
  • For a molded retro presentation, line a small bowl with plastic wrap, pack in the dip, chill until firm, then invert onto a serving plate.

Notes

Chill the dip long enough for the olive brine and cheddar flavor to blend into the cream cheese base. Serve with crackers, celery sticks, or toasted bread rounds.
