Cattle Ring Dip

Cattle Ring Dip is a creamy, tangy Tex-Mex party dip made with pepper jack, taco seasoning, corn nuts, and Fritos. The crunchy topping and Bundt-pan ring presentation make it festive, fun, and easy to serve.

Ingredients
  

  • 2 8-ounce blocks cream cheese softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded pepper jack cheese
  • 3 green onions chopped
  • 1/2 red bell pepper finely diced
  • 1 packet taco seasoning divided
  • 1 cup Fritos lightly crushed, not pulverized
  • 1/2 cup corn nuts
  • 3/4 cup chunky salsa for filling the center after unmolding
  • tortilla chips, corn chips, or veggie sticks for serving

Instructions
 

  • Line an 8-cup Bundt pan completely with plastic wrap, letting plenty hang over the edges so you can easily unmold the dip later.
  • In a medium bowl, combine the softened cream cheese, sour cream, shredded pepper jack, chopped green onions, diced red bell pepper, and half of the taco seasoning packet, then mix until evenly combined.
  • In a small bowl, stir together the lightly crushed Fritos, corn nuts, and the remaining half packet of taco seasoning.
  • Sprinkle the Frito and corn nut mixture evenly in the bottom of the plastic-wrap-lined Bundt pan; this will become the crunchy top once the dip is inverted.
  • Spoon the cheese mixture over the crunchy layer, pressing it down gently and evenly as you go so the ring holds together, then level the top.
  • Cover the pan with more plastic wrap and refrigerate for at least 2 hours, until the dip is firm enough to unmold cleanly.
  • When ready to serve, peel off the top layer of plastic wrap, place a serving plate or platter over the Bundt pan, invert it, lift the pan away, and carefully peel off the plastic-wrap liner.
  • Press back any crunchy bits that cling to the wrap, spoon the chunky salsa into the center of the ring, and serve right away with tortilla chips, corn chips, or veggie sticks.

Notes

This is a cold dip, so no reheating is needed. Cover leftovers tightly and refrigerate for up to 3 days; the crunchy topping will soften after the first day but will still taste good. If you expect leftovers, keep the salsa separate until serving, and do not freeze because cream cheese and sour cream dips can become grainy and watery after thawing.
