Caramel Cheesecake Bars

These caramel cheesecake bars combine a buttery graham cracker crust, creamy vanilla cheesecake, and a luscious caramel swirl. They're simple to make and absolutely irresistible.

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter melted
  • 2 packages (8 oz each) cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup caramel topping
  • 1 tablespoon all-purpose flour

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9x13 inch baking pan.
  • In another bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  • Add eggs one at a time, beating well after each addition.
  • Pour the cream cheese mixture over the crust in the pan.
  • Mix the caramel topping with flour until well combined. Drizzle over the cream cheese layer.
  • Use a knife to swirl the caramel into the cream cheese.
  • Bake for 30–35 minutes, or until the filling is set.
  • Let cool, then refrigerate for at least 3 hours.
  • Cut into bars and serve.

Notes

Toasted pecans or sea salt flakes make a wonderful addition to the caramel swirl if you're feeling fancy. These bars also freeze beautifully—just wrap them individually and thaw overnight in the fridge before serving.
