Beef Dorito Casserole

This hearty, cheesy casserole layers seasoned beef, beans, veggies, and crunchy Doritos for a fun and flavorful Tex-Mex dinner. Perfect for a family meal or game day gathering.

Ingredients
  

  • 1 lb lean ground beef
  • 1 yellow onion diced
  • 1 red pepper diced
  • 1 oz package taco seasoning
  • 1/2 cup water or beef broth
  • 14.5 oz can tomatoes and green chiles drained
  • 15 oz can black beans drained and rinsed
  • 3/4 cup sour cream
  • 9 oz bag Cool Ranch Doritos
  • 3 1/2 cups shredded Mexican blend cheese
  • sour cream and salsa for topping

Instructions
 

  • Preheat oven to 350°F and grease a 9x13-inch baking dish.
  • In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain grease.
  • Add diced red pepper and onion to the skillet with the beef. Cook for 3–4 minutes until softened.
  • Stir in taco seasoning and water or broth. Reduce heat to low and let simmer for 5–6 minutes until thickened.
  • Add drained tomatoes and green chiles, black beans, and sour cream. Stir to combine and remove from heat.
  • Slightly crush about 1 cup of Doritos and spread them in the bottom of the prepared baking dish.
  • Layer half the beef mixture over the Doritos, then top with another layer of crushed chips and half the cheese.
  • Add the remaining beef mixture, top with more crushed Doritos and the remaining cheese.
  • Bake for 25–30 minutes or until bubbling and golden brown on top.
  • Serve hot, topped with sour cream, salsa, hot sauce, or chopped green onions, if desired.

Notes

Try substituting regular nacho cheese Doritos for a more classic flavor, or use spicy varieties for extra kick. This casserole also reheats well the next day.
