Beef and Noodle Casserole

This warm, cheesy casserole is a weeknight classic! Made with ground beef, tender egg noodles, and a creamy mushroom sauce, it's a comforting dish the whole family will love.

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 8 ounces egg noodles
  • 1 tablespoon olive oil
  • 1 teaspoon dried parsley optional
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the egg noodles according to package instructions, then drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  • Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
  • Stir in the cream of mushroom soup and sour cream, mixing until well combined. Season with salt and pepper to taste.
  • Add the cooked noodles to the beef mixture, stirring gently to combine.
  • Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool slightly before serving. Garnish with dried parsley if desired.

Notes

Want to sneak in some veggies? Try mixing in a handful of frozen peas or corn with the beef. For extra zip, add a pinch of crushed red pepper flakes to the sour cream mix. Leftovers reheat beautifully too!
