Ingredients
  

  • 2 boneless, skinless chicken breasts cut into cubes
  • 1/3 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup pineapple juice
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1/4 cup onion diced
  • 1/4 cup bell pepper diced
  • 1/4 cup pineapple diced

Instructions
 

  • Preheat oven to 375°F.
  • In a shallow bowl, mix together cornstarch, garlic powder, salt, and pepper.
  • Toss the chicken cubes in the cornstarch mixture to coat evenly.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 3–4 minutes until lightly browned.
  • In a separate bowl, whisk together pineapple juice, ketchup, brown sugar, and apple cider vinegar.
  • Transfer the browned chicken to a 9x13 inch baking dish.
  • Pour the pineapple juice mixture over the chicken in the baking dish.
  • Top with diced onion, bell pepper, and pineapple.
  • Bake for 25–30 minutes, or until chicken is cooked through and sauce is bubbly.
  • Serve over cooked rice and enjoy!

Notes

For added crunch, sprinkle sesame seeds or sliced green onions on top before serving. This dish pairs beautifully with jasmine rice or steamed veggies on the side.
